Macadamia Spread This wonderfully versatile product is made from premium roasted sliced macadamias put through a fine mill to produce a nutty spread with the consistency of honey. Use it whenever you use bread, toast, pitas, wraps or crackers. The macadamia spread adds to and brings out the flavours of other ingredients when making sandwiches, is wonderful on the base of pizzas.
It can be thinned down with lemon and lime juice or balsamic vinegar to make beautiful nutty dressings for salads. Combined with honey or golden syrup, lemon or lime juice and warmed in the microwave it makes a beautiful sweat and sour nutty sauce, exquisite with fish, especially with salmon. Play, add finely grated fresh ginger, crushed garlic, chilli's, fresh herbs... to create your own taste sensations.
You are only limited by your imagination - combine it with melted chocolate, caramel sauce or honey to make sweet sauces for desert or over ice cream. Spike it with sweet Thai chilli sauce, apricot chutney or plum sauce to create savoury additions to any meal.
Ingredients: Sheets of short pastry emacadamia spread emacadamia natural slices
Sweet Thai chilli sauce and/or apricot chutney and/or plum sauce
Instructions: Take 3 tablespoons* of emacadamia spread and 1 teaspoon* of sweet Thai chilli sauce and mix together in a small bowl. Spread this over each sheet of short pastry making sure that you work the spread mixture to the edges. With a sharp knife slice the sheet vertically into 1cm wide strips and divide horizontally into thirds. Sprinkle on emacadamia natural slices and pat down into spread mixture. Take each end of the strip and twist, then place on baking tray pushing on each end so they do not un-twist. Bake in a hot oven - See short pastry packet for required oven heat.
*You can use as little or as large an amount as you require. For example you might use sweet Thai chilli sauce for the first 2 sheets then make a new mixture using a sauce of your choice. This way you will end up with a variety of flavours. You can also vary the degree of spike by varying the amount of sauce added to the emacadamia spread.
Macadamia Slices emacadamia slices come in 3 grades - fine, medium and large and are available in two varieties - Natural and Roasted.
Natural macadamia slices are made from macadamias kernel that has been dried until crisp but not roasted. They are creamy white in colour and retain all the goodness of the natural nut. Although natural macadamia slices can be used just as they are on top of soups, salads and stir-fries or added into your morning cereal or your lunchtime sandwich, they are especially wonderful when added to any cooked meals.
Again you are only limited by your imagination. By sprinkling natural macadamia slices on the top of everyday dishes you titillate the senses, your dishes look good and taste delicious and the air is filled with a beautiful nutty aroma.
Roasted macadamia slices are made from macadamia kernels that have been flame roasted. They are golden and crisp and firmer in texture than the natural macadamia slices. They add texture, colour and mouth feel to finished dishes. Sprinkle large roasted macadamia slices on top of salads, stir-fries and fresh fruit salad just before dishing. Wonderful on top of ice cream, cheese cakes, chocolate cakes in fact any desert.
Roll truffles in fine roasted macadamia slices or incorporate them with biscuit crumbs in the bases of cheese cakes to add a touch of magic. Add your own herbs and spices to make your own roasted macadamia dukkah.

They satiate your hunger, stop you picking between meals and are wonderful tools for healthy living.
