Ingredients: 250gm container of light cream cheese 250gm container of light cottage cheese 250gm block of port cheddar (grated)
1 cup of diced dried fruit or fruit medley 1 Tsp of port 2 cups of sliced roasted and salted macadamias
Instructions:
Pour port over diced fruit and set aside to marinate. Pour excess liquid off cottage cheese. Combine cream cheese and cottage cheese and mix until smooth. Add in marinated dried fruit and mix, then stir in grated port cheddar.
Tip mixture onto silver foil or baking paper and shape into a log. Divide log into 4 even portions. Shape each into a ball then roll in sliced macadamias until thickly coated. Rest in fridge.
Serve surrounded with a selection of apple, pear, nashi and kiwi fruit slices and plain coconut or shortbread biscuits.
Variation: 12 or more smaller individual cheese balls can be made instead of 4 larger ones and individual platters set up for each dinner.
This is great at the end of a meal with coffee, port, liqueurs.
