Caramelised onions on macadamia hummus


One 415gm tin of chickpeas
Clove of garlic
½ cup of macadamia nut paste
Juice of large lemon or 2 limes
¼ tsp salt optional

Drain and wash tinned chickpeas in sieve. Put into kitchen whiz.

Add macadamia nut paste and crushed clove of garlic and salt if used.


Add lemon or lime juice and continue to blitz.

Turn out into a container and leave over night for flavours to develop.

Tip: The consistency of this can be adjusted to suit. Add some water to make a softer almost mouse like dip.
