Mini Fruit and Nut Muffins.

Mini fruit &nut muffins


1 cup All-Bran cereal
½ cup of fruit juice or made up cordial
1 cup of plain flour
¼ cup sugar
2 ½ tsp baking powder
¼ tsp salt
1 egg
¼ cup vegetable oil
1 cup fruit
½- ¾ cup nut slices, medium grade.


Pre heat oven to 160 degrees Celsius. I use thermo bake / fan bake option.

Prepare the mini muffin tins with cooking spray.

Pour fruit juice over All-Bran in a small bowl.

In a large bowl shift in flour and baking powder, then add sugar and salt. Stir to combine.

Add nut slices, reserving a few for the tops of the muffins.

Go back to the small bowl and add egg and vegetable oil and stir.

Fruit can be fresh finely chopped or grated or tinned well drained and sliced up.

Add wet ingredients to dry ones in the big bowl.

Stir until dry ingredients are just moistened.

Spoon into mini muffin tins and lightly pat the spare slices onto the top of each muffin.

Bake until golden brown. Serve warm or cold.

Variations: Orange juice, drained crushed pineapple with grated carrot and a small spoonful of marmalade using macadamia nut slices makes a real Hawaiian tasting muffin. Try apple juice, grated apple and walnut slices and sprinkle cinnamon sugar on the top. Raspberry cordial, drained tinned boysenberries and pecan slices. Try lime cordial, lemon and ginger… It is endless and such fun. Christine.
